Check the shell colour first

Real Kashmiri walnut shells are light to medium brown, with natural marks and small unevenness. If a shell looks shiny white or unusually pale, it is often bleached, which is sometimes done to make walnuts look more attractive. This bleaching does not mean the kernel inside is fresh — it is just changing how the shell looks.

Look at the shape

Genuine walnut shells have a natural, slightly uneven shape, not a perfect round ball. Very smooth, perfectly round shells with no natural marks are less common in real hill-grown walnut and are worth a second look.

Check the kernel colour

Break one open and look at the kernel. It should be light golden to light brown in colour. A kernel that looks bright white usually means it has been treated or bleached in some way, which is not something you want in a natural food product.
