Kashmiri Pumpkin Seeds, or Desi Kaddu Beej as we call it here, are raw seeds taken out from the kaddu (pumpkin) grown in Kashmir. These are not the roasted, salted, shop-packet type seeds you get in market - we are giving them in plain, raw and natural form, exactly as they come after cleaning and drying, same way as our Snow Mountain Garlic which we also give raw and whole, without any processing.
We are sourcing pumpkin from local Kashmiri farms, where kaddu is grown as normal kitchen vegetable in home gardens and small fields. Seeds are taken out by hand, washed properly, and then dried the traditional sun-dried way before packing. No machine roasting, no chemical treatment, no added colour is done at any step.
Once you open the pack, you will see whole desi pumpkin seeds, off-white to light cream in colour, with the natural outer covering still on. Because these are raw and not roasted, the taste is mild and little nutty, not salty or crunchy like packet seeds you find in shop. This is the natural taste of kaddu beej before any processing.
How to use: you can eat these seeds directly as a light snack, few handfuls at a time. Many people in Kashmir also dry roast small amount on tawa at home with little ghee before eating, or add raw seed to chutney, salad, or sprinkle over dal and sabzi. Being raw, seed is soft to chew - if you like more crunch, dry roast on low flame for 2 to 3 minutes at home before eating.

Storage tips: once you open pack at home, keep seeds in an airtight container or jar, in a cool dry place away from moisture and direct sunlight. Stored this way, seeds stay good for several months.
