In Kashmir, as soon as warm weather arrives or the holy month of Ramadan begins, every market and kitchen prepares Babribyol Treish. Baber Bool (or Babribyol in Kashmiri) are the small, tear-shaped seeds of the mountain sweet basil plant that grows in valley herb gardens.

They look like tiny black seeds, but the moment you drop a spoon into water, they swell up in less than 5 minutes into clear, jelly-like pearls with a dark center. They have a cooling, soothing effect on the body.

Our Baber Bool is carefully hand-sieved and winnowed to remove dust and dry plant matter, so you get clean seeds ready to soak. Add them to cold milk with a dash of Rooh Afza or rose water, spoon them over fruit custard, lemonade, or falooda. It is the most refreshing, gentle cooling drink our elders taught us to drink.

What is the difference between Baber Bool (Sabja) and Chia seeds?

While both are super-healthy cooling seeds, they are different plants. Baber Bool (Babribyol / Sabja) comes from the sweet basil plant (Ocimum basilicum). They are completely jet-black and tear-shaped. When put in water, Baber Bool swells in just 3 to 5 minutes into translucent round jelly beads with a black center. Chia seeds are oval, mottled grey-black, and take 20 to 30 minutes to swell. In Kashmir, Baber Bool is traditionally loved for instant cooling summer drinks.

What is 'Babribyol Treish'?

In Kashmiri, 'Treish' means thirst-quenching drink. Babribyol Treish is Kashmir's most famous heritage summer beverage. It is made by soaking Baber Bool in cold water or milk, sweetened with a touch of rose syrup (Rooh Afza) or honey, and served ice-cold. During Ramadan Iftar in Kashmir, it is served in almost every mosque and household to quickly cool and hydrate the body.

Do I need to chew the seeds or swallow them?

Once soaked, each seed is surrounded by a soft, slippery gelatinous halo. You can simply drink them along with your milk, sherbet, or water. They are soft and slide down effortlessly.

Is it cleaned of sand and dust?
