Kashmiri Shah Jeera, also known in Kashmiri as Siah Zeera and in Hindi as Shahi Jeera or Kala Jeera, is one of the most fragrant mountain spices from Kashmir.

Many people confuse Shah Jeera with regular cumin (safed jeera), but both look and taste very different. Regular cumin is thick, light brown, and gives an earthy, everyday flavour. Kashmiri Shah Jeera has thin, dark brown to black curved seeds with a very rich, sweet, and cooling aroma.

Our Shah Jeera grows wild on the cold mountain slopes of Kashmir and Kishtwar at high altitudes. Local collectors handpick the seed heads during late summer. Once harvested, the seeds are dried naturally in the clean mountain air, hand-sieved, and winnowed to remove dust, chaff, and little stones.

Because the aroma is so concentrated, you only need half a teaspoon in your cooking. It is a key spice in traditional Kashmiri Wazwan dishes like Rogan Josh, Rista, and Yakhni, and gives royal biryanis and pulaos their famous restaurant-style aroma without making the dish heavy.

What is Kashmiri Shah Jeera?

Kashmiri Shah Jeera, called Siah Zeera in the valley and Shahi Jeera across India, is a rare wild mountain spice. It has slender, dark, slightly curved seeds with an unmistakable sweet-woody fragrance. Unlike common white cumin, it is reserved for special dishes like royal biryani, Kashmiri Wazwan, and festive pulao.

Wild harvested from cold high altitudes

This spice is not cultivated in flat agricultural plains. It grows naturally in the wild high-altitude mountain meadows of Kashmir and Kishtwar. Local mountain foragers collect the mature seed clusters by hand at the end of summer, bringing down a harvest untouched by farm sprays or chemicals.

Cleaned by hand, zero polish

Wild seeds can often have small pebbles or mud dust. We thoroughly winnow, hand-sort, and sieve every batch so that you get clean, pure seeds ready to put straight into your pot. We do not oil-polish or add any artificial gloss.

How to get the best flavour in your kitchen

Because Shah Jeera is delicate, never throw it into smoking-hot oil where it can turn bitter. Add it to warm ghee alongside cinnamon and green cardamom, or sprinkle a pinch over hot rice just before sealing the pot for dum. Even a small pinch fills the entire kitchen with fragrance.

How to store it at home

Transfer the seeds into an airtight glass container as soon as you open the pouch. Store it in a cool, dry spice rack away from stove steam and direct sunlight so the essential oils stay fresh for over a year.

How to use

Add 1/2 to 1 teaspoon to warm ghee or oil along with whole spices for biryani, pulao, or meat gravies. Can also be lightly toasted and ground into fresh home garam masala, or sprinkled over rice before dum.

Storage Instructions

What is the difference between normal Jeera and Kashmiri Shah Jeera?

Normal Jeera (cumin) is thick, light brown, and used for daily dal and subzi tadka. Kashmiri Shah Jeera is much thinner, darker in colour, and grows wild in the high mountains. It has a sweet, royal aroma and is used in biryani, pulao, and rich gravies.

How much Shah Jeera should I use in cooking?

Because Kashmiri Shah Jeera has high natural essential oils, it is very aromatic. Half a teaspoon to one teaspoon is plenty for a 1 kg biryani or a family-sized pot of pulao.

When should I add Shah Jeera while cooking?

Add it in moderately warm ghee or oil along with whole spices like cardamom and cinnamon. Do not burn it in smoking hot oil. You can also sprinkle a pinch over rice before covering for dum.

How long does Shah Jeera stay fresh?
