In Kashmiri, we call wild pomegranate seeds Daen. Wild pomegranate shrubs grow naturally on the rocky mountain hillsides across South Kashmir and Ramban. Unlike hybrid sweet pomegranates you find in fruit markets, these wild mountain pomegranates (Dharuni) are small and naturally very sour. That sourness is what makes them famous!

Every autumn, local families handpick the ripe fruit, break open the thick ruby shells, and spread the seeds on clean cotton sheets to dry naturally under the mountain sun. We do not spray them with red food color or coat them with sugar. They have a deep ruby-brown color, a chewy bite, and a clean, tart tang.

Use them in your chole, grind them with fresh mint and green chillies for Kashmiri Daen chutney, or crush them into stuffed parathas. A single spoonful gives a rich, fruity tang that lemon juice or amchur can never match.

For Chole and curries, dry roast a tablespoon of seeds lightly on a pan and grind into a coarse powder, then add along with your masala. Why is Kashmiri Anardana sour while regular pomegranates are sweet?

Kashmiri Anardana comes from the wild mountain pomegranate tree, known locally as Dharuni or Daru. Unlike cultivated sweet farm pomegranates (Kandhari or Bhagwa), wild mountain pomegranates have small, hard fruit that is naturally very tart. That concentrated natural sourness is prized across North India for cooking.

Why are the seeds dark ruby-brown instead of bright red?

When real wild pomegranate seeds are dried under the sun naturally, their natural sugars and fruit acids oxidize slightly, turning them a deep ruby-brown or garnet color. If you ever see bright crimson-red anardana in the market, it has likely been treated with artificial food coloring.
