In Kashmiri homes, winter food is never complete without Monje Achar (Kashmiri Kohlrabi Pickle / Ganth Gobhi ka Achar). Kohlrabi is grown widely across Kashmir valley gardens in autumn and winter. The cold weather makes the kohlrabi bulbs sweet, firm, and full of natural crunch.
How we make our Monje Achar in the traditional Kashmiri way:
1. Fresh Harvest & Peeling: We select fresh, tender kohlrabi bulbs from valley farms. The thick outer skin is carefully peeled off, and the crisp inner bulb is sliced into thick finger-sized batons.
2. Natural Sun-Drying: The sliced pieces are spread on clean cotton sheets under the mild Kashmir sun for 1 to 2 days. This drying step removes excess water from the vegetable. Because of this, the kohlrabi pieces stay crunchy and never turn soft or soggy in the oil.
3. Stone-Ground Valley Spices: We mix the sun-dried kohlrabi with pure, cold-pressed raw mustard oil (sarson tel) and freshly roasted Kashmiri spices:
• Kashmiri Degi Lal Mirch: Gives a beautiful natural red colour and mild warm flavour without burning your stomach.
• Badi Saunf (Fennel Seeds) & Sonth (Dry Ginger): Gives that signature sweet aroma and helps in easy digestion.
• Crushed Rai (Mustard Seeds) & Methi Dana (Fenugreek): Gives a pleasant tangy punch and deep savoury taste.
• Shudh Hing (Asafoetida) & Rock Salt (Sendha Namak): For pure taste and natural preservation.
4. Martaban Sunlight Fermentation: The spiced kohlrabi is packed into traditional glass and ceramic Martaban jars, covered with a layer of pure mustard oil, and left in the sunlight for days. The natural sourness comes purely from the mustard seeds and sunlight fermentation. We never add synthetic white vinegar (acetic acid) or artificial colour.

Every bite gives you a loud, satisfying crunch. The natural sweetness of the kohlrabi bulb blends perfectly with the pungent warmth of raw mustard oil and the soothing aroma of fennel seeds.

• Stuffed Aloo, Paneer, or Gobhi Parathas
• Simple Khichdi or Curd Rice on light dinner days

The Tradition of Winter Monje Achar in Kashmiri Homes
In every Kashmiri home, as autumn leaves turn golden and winter approaches, families buy sacks of fresh, purple-green Monj (kohlrabi) from local farmers. Making Monje Achar is a warm family tradition. The outer hard skins are peeled, the firm white bulbs are cut into thick wedges, and the pieces are laid out on clean cotton sheets on rooftops or courtyards to catch the mild sun. Drying them in the crisp mountain air removes the water without cooking the vegetable. Once dry, they are tossed with fragrant roasted fennel, dry ginger, mustard seeds, and rich Kashmiri red chilli, then poured into ceramic Martaban jars with raw mustard oil to sun-ferment slowly over two weeks.
